Filet Mignon is the most exceptional cut on a beef carcass. The tenderness and marbling are unparalleled. These steaks can range from 6 oz up to 14 oz, depending on the thickness and size of the beef when processed. We usually have steaks cut 1" thick but can get whatever size you want (may require some lead time).
